What Type Of Diet Should A Person With Polycythemia Be On?

I was diagnosed with polycythemia last year, as of now I am on baby aspirin. I have little to no signs of the blood cancer. I want to keep it that way. I was hoping for some suggestions of a healthy diet. I rarely eat red meat. I do eat yogurt, fish, cheese, berries, fruit, nuts and lots of veggies. I love spinach and eat it every day, should I not eat spinach?
Any suggestions would be appreciated.
